Ingredients
- young goat (cabrito) – 1 whole (approx. 5-7 kg)
- salt – 2 tablespoons / 30 g
- black pepper – 1 tablespoon / 15 g
- garlic cloves (crushed) – 10 cloves
- olive oil – 1/2 cup / 120 ml
- fresh rosemary – 4 sprigs
- lemon juice – 1/4 cup / 60 ml
- bay leaves – 3 leaves
Instructions
- Preheat your outdoor grill to a medium heat level.
- In a bowl, mix olive oil, lemon juice, crushed garlic, salt, and black pepper. Rub this mixture thoroughly over the entire goat.
- Place rosemary and bay leaves inside the cavity of the goat.
- Secure the goat on a rotisserie or grilling spit, ensuring it’s balanced and steady.
- Slow-roast the goat over the grill for 3-4 hours, turning it occasionally, until the meat is tender and the skin is golden brown.
- Let the roasted cabrito rest for 15 minutes before carving.
