Ingredients

  • Yukon Gold potatoes – 2 pounds / 900 g

  • Cooked chicken breast, shredded – 2 cups / 300 g
  • Mayonnaise – 1/2 cup / 120 g
  • Avocado, sliced – 1 large
  • Boiled eggs, sliced – 2
  • Black olives, sliced – 1/4 cup / 40 g
  • Salt – to taste
  • Ground black pepper – to taste
  • Cilantro, for garnish – a few sprigs

Instructions

  1. Boil the potatoes until tender, peel, and mash them while still warm.
  2. Mix the mashed potatoes with aji amarillo paste, lime juice, olive oil, salt, and pepper until smooth.
  3. In a separate bowl, mix the shredded chicken with mayonnaise and season with salt and pepper.
  4. In a casserole dish, layer half of the potato mixture evenly at the bottom.
  5. Add a layer of avocado slices, followed by the chicken mixture.
  6. Top with another layer of the potato mixture, smoothing the surface.
  7. Decorate with boiled egg slices, black olives, and cilantro sprigs.
  8. Refrigerate for at least 1 hour before serving.
