Ingredients

  • Tasajo beef (thinly sliced) – 500 g / 1.1 lbs
  • Pepitas (pumpkin seeds) – 1 cup / 130 g
  • Garlic cloves (minced) – 4 cloves
  • White onion (chopped) – 1 medium / 150 g
  • Tomatoes (chopped) – 2 large / 400 g
  • Poblano peppers (roasted and sliced) – 2 / 200 g
  • Chicken broth – 4 cups / 960 ml
  • Cilantro (chopped) – 1/2 cup / 30 g
  • Olive oil – 2 tablespoons / 30 ml
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Toast the pepitas in a dry pan over medium heat until fragrant and slightly golden. Set aside to cool.
  2. In a large pot, heat olive oil over medium heat and brown the tasajo beef. Remove and set aside.
  3. In the same pot, add garlic and onion, sautéing until the onion is translucent.
  4. Add the tomatoes and cook until they begin to break down.
  5. Stir in the roasted poblano peppers and return the tasajo to the pot.
  6. Pour in the chicken broth, and bring to a simmer.
  7. Grind the cooled pepitas in a blender or food processor until fine, then add to the stew.
  8. Allow the stew to simmer for 20-25 minutes.
  9. Mix in the chopped cilantro and adjust seasoning with salt and pepper to taste before serving.
