Ingredients

  • fresh squash blossoms – 2 cups / 60 g
  • butter – 2 tbsp / 28 g
  • yellow onion, chopped – 1 medium / 150 g
  • garlic cloves, minced – 2 cloves
  • chicken stock – 4 cups / 960 ml
  • corn kernels – 1 cup / 150 g
  • Mexican crema or sour cream – 1 cup / 240 ml
  • corn masa harina – 2 tbsp / 20 g
  • cilantro, chopped – 1/4 cup / 15 g
  • salt – to taste
  • white pepper – to taste

Instructions

  1. Gently rinse the squash blossoms and remove the stems and tough base.
  2. In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until translucent.
  3. Add the squash blossoms and corn, cooking for an additional 5 minutes.
  4. Pour in the chicken stock, bring to a boil, then reduce to a simmer for 15 minutes.
  5. In a small bowl, mix the corn masa with a little water to form a paste, then stir it into the soup to thicken.
  6. Stir in the Mexican crema or sour cream and remove from heat.
  7. Use an immersion blender to puree the soup until smooth.
  8. Season with salt and white pepper to taste. Garnish with chopped cilantro before serving.
