Ingredients

  • long-grain white rice – 1 cup / 195 g
  • water – 2 cups / 480 ml
  • lime juice – 1/4 cup / 60 ml
  • lime zest – 1 tablespoon
  • olive oil – 2 tablespoons
  • salt – 1 teaspoon
  • fresh cilantro – 1/4 cup / 15 g, chopped
  • onion – 1/2 cup / 75 g, finely chopped
  • garlic – 2 cloves, minced

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the onion and garlic, and sauté until translucent, about 3 minutes.
  4. Add the rice to the saucepan and stir to coat in the oil, sauté for another 2 minutes.
  5. Pour in the water, lime juice, and add the lime zest and salt.
  6. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.
  7. Remove from heat and let it rest, covered, for 5 minutes.
  8. Fluff the rice with a fork, then stir in the fresh cilantro before serving.
