Ceviche de Sierra is a tantalizing appetizer hailing from the coastal regions of Mexico, where the lush Pacific waters teem with fresh fish. This dish is a harmonious blend of raw sierra, or mackerel, which is cured in zesty citrus juices, marrying the vibrant flavors of the ocean with the bold, fresh ingredients of the land. A staple in Mexican culinary tradition, ceviche highlights the ingenious simplicity of transforming raw fish into a flavor-packed delicacy that’s light, refreshing, and utterly captivating.

Ingredients

  • fresh sierra (mackerel) fillets – 1 lb / 450 g
  • limes, juiced – 1 cup / 240 ml
  • red onion, finely chopped – 1 medium / 150 g
  • tomatoes, diced – 2 medium / 200 g
  • fresh cilantro, chopped – 1/4 cup / 15 g
  • serrano chilies, finely chopped – 2 small
  • salt – 1 tsp / 5 g
  • avocado, diced – 1 large / 200 g

Instructions

  1. Slice the sierra into small, bite-sized pieces and place them in a glass bowl.
  2. Pour the lime juice over the fish, ensuring all pieces are submerged. Cover and refrigerate for 1 hour until the fish is opaque.
  3. In a separate bowl, combine the red onion, tomatoes, cilantro, and serrano chilies.
  4. Drain excess lime juice from the fish and mix with the vegetable mixture. Season with salt.
  5. Gently fold in the diced avocado and serve immediately with tortilla chips or tostadas.

Substitutions

  • fresh sierra (mackerel) -> tilapia or halibut
  • serrano chilies -> jalapeño peppers

Enhancements in the Next Evolution

  • Marinate the fish in a mix of lime, orange, and grapefruit juice for a more complex citrus flavor.
  • Add a hint of garlic to the vegetable mix for depth.
  • Include a few slices of radish for added crunch and visual appeal.
