Ingredients

  • okra – 2 cups / 300 g, sliced
  • firm white fish – 1 lb / 450 g, cut into chunks
  • onion – 1 large, diced
  • garlic – 3 cloves, minced
  • tomatoes – 2 medium, chopped
  • chicken stock – 4 cups / 960 ml
  • coconut milk – 1 cup / 240 ml
  • fresh thyme – 1 tsp
  • bay leaf – 1
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • scotch bonnet pepper – 1, whole
  • lime juice – 1 tbsp
  • olive oil – 2 tbsp

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.
  2. Stir in the chopped tomatoes and cook until they begin to break down.
  3. Add sliced okra to the pot and cook for 5-6 minutes, allowing the slime to evaporate.
  4. Pour in chicken stock and coconut milk, stirring well. Add fresh thyme, a bay leaf, salt, pepper, and the whole scotch bonnet pepper.
  5. Bring the mixture to a simmer and cook for 15 minutes.
  6. Add the fish chunks and lime juice, gently stirring into the soup. Let it simmer for another 10-15 minutes or until the fish is cooked through.
  7. Remove the scotch bonnet pepper before serving.
  8. Serve hot, garnished with additional thyme if desired.
