Ingredients
- Chicken thighs – 1 pound / 450 g
- Olive oil – 2 tbsp
- White onion, finely chopped – 1 medium / 150 g
- Garlic cloves, minced – 3 cloves
- Aji amarillo paste – 2 tbsp
- Cilantro, finely chopped – 1 cup / 60 g
- Carrot, diced – 1 large / 130 g
- Green peas – 1 cup / 150 g
- Long-grain rice – 3/4 cup / 150 g
- Chicken stock – 6 cups / 1.4 liters
- Corn cob, cut into rounds – 1 large
- Salt – to taste
- Black pepper – to taste
- Lime wedges – For serving
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until translucent.
- Stir in aji amarillo paste and cilantro, cooking for another 2 minutes to release their flavors.
- Add chicken thighs, carrots, and corn. Season with salt and pepper.
- Pour in chicken stock and bring to a boil. Reduce heat and let simmer for 15 minutes.
- Stir in rice, cover, and cook for an additional 20 minutes, or until the rice is tender.
- Add green peas and cook for another 5 minutes. Adjust seasonings as needed.
- Serve hot with freshly squeezed lime juice.
