  • butter – 2 tablespoons / 28 g
  • all-purpose flour – 2 tablespoons / 16 g
  • whole milk – 1 cup / 240 ml
  • shredded cheddar cheese – 2 cups / 200 g
  • diced green chilies – 1/2 cup / 75 g
  • cumin – 1 teaspoon
  • garlic powder – 1 teaspoon
  • onion powder – 1 teaspoon
  • salt – 1/2 teaspoon
  • black pepper – 1/2 teaspoon

Instructions

  1. In a medium saucepan, melt butter over medium heat.
  2. Stir in the flour and cook for about 1 minute until slightly bubbly, creating a roux.
  3. Gradually add milk, whisking constantly until the mixture thickens, about 2-3 minutes.
  4. Reduce heat to low, add shredded cheddar cheese in batches, stirring until completely smooth.
  5. Stir in diced green chilies, cumin, garlic powder, onion powder, salt, and black pepper.
  6. Continue to stir over low heat until all ingredients are well blended and the queso is smooth and creamy.
