  • paprika – 1 teaspoon
  • white wine – 1 cup / 240 ml
  • bay leaves – 3 leaves
  • onion – 1 large, sliced

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. In a bowl, combine minced garlic, olive oil, salt, black pepper, and paprika.
  3. Rub the mixture generously over the cupim and let it rest at room temperature for 30 minutes.
  4. Place the marinated cupim into a roasting pan, add white wine and bay leaves.
  5. Cover the pan tightly with aluminum foil and roast in the oven for 4-5 hours until the meat is tender.
  6. Halfway through, add the sliced onion for added flavor.
  7. Once cooked, remove from the oven and let it rest covered for 15 minutes before slicing and serving.
