Pozole is a traditional Mexican stew that dates back to pre-Columbian times, believed to have been created by the indigenous peoples of Mexico. Originally a celebratory dish, pozole is made with hominy and meat, often seasoned with assorted spices and herbs, bringing together a harmonious blend of flavors. This comforting stew can be found at Mexican festivities, enjoyed by gathering friends and family around a communal table.
Ingredients
- Pork shoulder – 2 lbs / 900 g
- Hominy – 2 cans (approx 29 oz each) / 1.3 kg total
- White onion – 1 large / 300 g
- Garlic cloves – 4 large
- Dried oregano – 1 tbsp / 3 g
- Bay leaves – 2
- Dried Guajillo chilies – 6
- Chicken broth – 8 cups / 2 L
- Radishes – 5, thinly sliced
- Shredded cabbage – 2 cups / 140 g
- Lime wedges – 3 limes, cut into wedges
- Salt – to taste
- Pepper – to taste
Instructions
- In a large pot, combine the pork shoulder, onion (halved), garlic, oregano, bay leaves, and chicken broth. Bring to a boil, then reduce heat to low and simmer for about 2 hours, until the pork is tender.
- While the pork is cooking, de-stem and de-seed the Guajillo chilies. Soak them in hot water for about 20 minutes until softened.
- Blend the softened chilies with a little soaking water until smooth. Strain the mixture into the pot with the pork to create a rich base.
- Remove the pork shoulder and shred the meat. Return it to the pot.
- Add the hominy to the pot and simmer for an additional 30 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with cabbage, radishes, and lime wedges.
