Ika Sōmen is a delicate and refreshing Japanese dish that celebrates the subtle sweetness and tender texture of squid. Originating from Hokkaido, Japan’s northernmost island known for its bountiful seafood, this dish perfectly highlights the island’s culinary heritage. The name ‘Ika Sōmen’ translates to ‘Squid Noodles’, referring to the fine, noodle-like strips of raw squid served with a gently flavored soy-based dipping sauce. Traditionally served as a chilled appetizer or light meal, it offers a clean, umami flavor profile with a hint of ocean freshness.

Ingredients

  • Fresh squid – 400 g / 14 oz
  • Somen noodles – 200 g / 7 oz
  • Soy sauce – 1/4 cup / 60 ml
  • Mirin – 2 tbsp / 30 ml
  • Dashi stock – 1 cup / 240 ml
  • Grated ginger – 1 tbsp / 15 g
  • Spring onion – 2 tbsp / 10 g, finely sliced
  • Wasabi – 1 tsp / 5 g (optional)

Instructions

  1. Clean the squid thoroughly, removing the innards and skin. Slice the squid into fine, noodle-like strips.
  2. Cook somen noodles according to package instructions, then rinse under cold water until chilled. Drain well.
  3. In a small pot, combine soy sauce, mirin, and dashi stock. Bring to a gentle simmer and then let cool.
  4. Serve strips of squid and somen noodles cooled in separate bowls with the dipping sauce on the side.
  5. Garnish with grated ginger and spring onion. Add a small dollop of wasabi if desired for additional kick.
