Ingredients
- Black Cod (Gindara) – 1 lb / 450 g
- Soy Sauce – 1/2 cup / 120 ml
- Mirin – 1/2 cup / 120 ml
- Sake – 1/4 cup / 60 ml
- Sugar – 2 tablespoons / 25 g
- Garlic, minced – 2 cloves
- Ginger, grated – 1 tablespoon / 15 g
- Green Onions, chopped – 2 stalks
- Sesame Seeds (optional) – 1 tablespoon / 10 g
Instructions
- In a bowl, mix soy sauce, mirin, sake, sugar, garlic, and ginger until the sugar dissolves.
- Place the black cod fillets in a shallow dish and pour the marinade over them, reserving a small amount for glazing later.
- Marinate the fish in the refrigerator for at least 30 minutes, or up to overnight for better flavor absorption.
- Preheat a grill or broiler to high heat.
- Remove the fish from the marinade and pat dry with paper towels; discard used marinade.
- Grill or broil the fish for 5-7 minutes on each side, basting occasionally with reserved marinade, until the fish is cooked through and starts to caramelize on top.
- Serve hot, garnished with chopped green onions and sesame seeds.
