Kamameshi is a traditional Japanese rice dish cooked in an iron pot called a ‘kama’. Originating in Japan, this dish embodies the essence of Japanese culinary art through its simplicity and versatility. Kamameshi gained its popularity in the early 20th century, often revered for its ability to turn simple ingredients into a flavorful, cohesive meal. The beauty of Kamameshi lies in its adaptability; it can incorporate local, seasonal ingredients, making it both comforting and nutritious.

Ingredients

  • short grain rice – 2 cups / 400 g
  • boneless chicken thighs – 200 g / 7 oz
  • shiitake mushrooms – 100 g / 3.5 oz
  • carrot – 1 medium / 70 g
  • soy sauce – 4 tbsp / 60 ml
  • mirin – 2 tbsp / 30 ml
  • sake – 2 tbsp / 30 ml
  • dashi stock – 3 cups / 720 ml
  • green peas – 1/2 cup / 80 g
  • vegetable oil – 1 tbsp / 15 ml
  • salt – to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear and soak for 30 minutes.
  2. Slice the chicken into bite-sized pieces and season with a pinch of salt.
  3. In a pot, heat vegetable oil over medium heat, add the chicken pieces, and cook until lightly browned.
  4. Add sliced shiitake mushrooms and julienned carrots to the pot and sauté for 5 minutes.
  5. Add soy sauce, mirin, sake, and dashi stock to the pot and bring to a simmer.
  6. Drain the rice and add it to the pot, spreading it evenly.
  7. Cover the pot, reduce heat to low, and cook for 30 minutes or until the liquid is absorbed and rice is tender.
  8. Stir in the green peas, cover, and let sit for 5 minutes before serving.

Substitutions

  • boneless chicken thighs -> tofu
  • shiitake mushrooms -> button mushrooms
  • mirin -> honey mixed with a splash of rice vinegar
  • dashi stock -> chicken stock
