Hotate nigiri sushi – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Hotate Nigiri Sushi is a delightful Japanese delicacy that showcases the natural, sweet flavor of scallops. Originating from the coastal regions of Japan, this dish is a highlight in sushi bars across the nation. The nigiri style involves molding vinegared rice with a simple topping, in this case, the tender, raw scallop. This preparation allows the freshness of the seafood to shine, offering a burst of the ocean in every bite.

Ingredients

  • sushi rice – 2 cups / 400 g
  • water – 2.5 cups / 600 ml
  • rice vinegar – 1/4 cup / 60 ml
  • sugar – 2 tablespoons / 25 g
  • salt – 1 tablespoon / 15 g
  • fresh scallops – 12 large pieces
  • soy sauce – for serving
  • wasabi – optional, for topping
  • nori seaweed – 1 sheet (cut into strips)
  • pickled ginger – for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.
  2. Cook the rice with the measured water in a rice cooker or pot. Once cooked, let it rest for 10 minutes.
  3. In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until dissolved. Do not boil.
  4. Transfer the rice to a wooden or glass bowl. Gradually pour the vinegar mixture over the rice, folding gently with a wooden spatula. Let it cool to room temperature.
  5. Shape about 20 g of the vinegared rice into an oval shape using your hands. Repeat until all rice is shaped.
  6. Place a piece of fresh scallop on top of each rice ball. Optionally add a tiny dab of wasabi between the rice and scallop.
  7. Wrap a thin strip of nori around the middle of each nigiri to secure the scallop.
  8. Serve the hotate nigiri with soy sauce, wasabi, and pickled ginger.

Substitutions

  • sushi rice -> short-grain rice
  • rice vinegar -> apple cider vinegar
  • fresh scallops -> canned or frozen scallops

Enhancements in the Next Evolution

  • Enhance the rice flavor with a piece of kombu while cooking.
  • Try gently torching the scallops for a caramelized finish.
  • Infuse the vinegar mixture with a small piece of dashi or kelp for added depth.
