- pork belly – 500 g / 1.1 lbs
- ramen noodles – 400 g / 14 oz
- white miso paste – 150 g / 5.3 oz
- soy sauce – 60 ml / 4 tbsp
- mirin – 60 ml / 4 tbsp
- chicken stock – 1 liter / 4 cups
- ginger – 30 g / 1 oz, grated
- garlic cloves – 4 cloves, minced
- green onions – 3, chopped
- sesame oil – 30 ml / 2 tbsp
- nori sheets – 2, cut into strips
- soft boiled eggs – 4, halved
- sugar – 1 tbsp / 12 g
Instructions
- Begin by preparing the pork belly. In a pot, sear the pork belly until browned on both sides. Remove and slice into bite-sized pieces.
- In the same pot, add sesame oil and the miso paste, cooking over medium-high heat until the miso is browned and fragrant.
- Add the grated ginger and minced garlic, and sauté for one more minute.
- Pour in the chicken stock, soy sauce, mirin, and sugar, stirring to combine. Simmer for 15 minutes to blend the flavors.
- Cook the ramen noodles according to package instructions, then drain and divide among 4 bowls.
- Ladle the hot broth over the noodles, and top with slices of pork belly, chopped green onions, nori strips, and halved soft boiled eggs.
