Chutoro Nigiri Sushi is a celebrated Japanese delicacy that originates from the vibrant sushi counters of Japan. Known for its rich, buttery texture, chutoro is the perfect balance between the fatty otoro and the leaner akami cuts of tuna, offering sushi enthusiasts an exquisite burst of flavor with every bite. Chutoro nigiri consists of a hand-formed oval of seasoned sushi rice topped with a slice of this prized tuna, offering a pure, simple expression of the fish’s natural flavors, enhanced by the subtle sweetness of vinegared rice.

Ingredients

  • sushi rice – 2 cups / 390 g
  • water – 2 cups / 480 ml
  • rice vinegar – 1/4 cup / 60 ml
  • sugar – 2 tbsp / 30 g
  • salt – 1 tbsp / 15 g
  • chutoro (medium-fatty tuna) – 200 g / 7 oz
  • wasabi – to taste
  • soy sauce – for serving

Instructions

  1. Rinse 2 cups of sushi rice under cold water until the water runs clear.
  2. Combine the rice and 2 cups of water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small saucepan, gently heat 1/4 cup rice vinegar, 2 tbsp sugar, and 1 tbsp salt until dissolved. Allow it to cool slightly.
  4. Transfer cooked rice to a wooden or glass bowl. Slowly fold in the vinegar mixture, fanning the rice to cool it quickly. Cover with a damp cloth until ready to use.
  5. Slice the chutoro into thin pieces about the size of the rice mounds.
  6. Wet hands with vinegar water, take a small amount of rice, and shape it into an oval (nigiri).
  7. Add a dab of wasabi to one side of the chutoro slice, then press onto the rice oval.
  8. Repeat with remaining rice and fish. Serve with soy sauce.

Substitutions

  • chutoro -> salmon or any preferred sushi-grade fish
  • rice vinegar -> apple cider vinegar with a bit of sugar
