Ingredients

  • Udon noodles – 400 g / 14 oz
  • Boneless chicken thighs – 300 g / 10.5 oz
  • Baby spinach – 100 g / 3.5 oz
  • Shiitake mushrooms – 100 g / 3.5 oz
  • Soy sauce – 60 ml / 4 tbsp
  • Mirin – 60 ml / 4 tbsp
  • Dashi stock – 1 liter / 4 cups
  • Ginger, grated – 1 tbsp
  • Garlic, minced – 2 cloves
  • Sesame oil – 2 tbsp
  • Spring onions, sliced – 2
  • Toasted sesame seeds – 1 tbsp

Instructions

  1. Cook the udon noodles according to package instructions, drain, and set aside.
  2. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
  3. Add chicken thighs, cook until browned on all sides.
  4. Stir in the soy sauce and mirin, coating the chicken evenly.
  5. Pour in the dashi stock, bring to a simmer. Add mushrooms, cook for 5 minutes.
  6. Add spinach and cooked udon noodles. Stir to combine and heat through.
  7. Serve hot, garnished with spring onions and sesame seeds.
