Ingredients

  • All-purpose flour – 2 cups / 240 g
  • Granulated sugar – 1/2 cup / 100 g
  • Unsalted butter – 1/2 cup / 115 g
  • Egg – 1 large
  • Almond extract – 1 tsp
  • Baking powder – 1 tsp
  • Ricotta cheese – 1 cup / 250 g
  • Powdered sugar – 1/2 cup / 60 g
  • Almonds – 1/2 cup / 60 g, finely chopped
  • Milk – 3 tbsp / 45 ml
  • Salt – 1 pinch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the egg and almond extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with milk, until a dough forms.
  6. Roll the dough into small balls and coat them in the finely chopped almonds.
  7. Place the balls on a baking sheet and slightly flatten each one with your palm.
  8. Bake for 12-15 minutes or until light golden brown.
  9. While baking, prepare the filling by mixing ricotta cheese with powdered sugar until smooth and creamy.
  10. Once pastries are cooled, fill each with a spoonful of sweetened ricotta.

Substitutions

  • Unsalted butter -> Salted butter (omit the pinch of salt in the recipe)
  • Almond extract -> Vanilla extract
  • Ricotta cheese -> Mascarpone cheese
