Ingredients

  • All-purpose flour – 5 cups / 625 g
  • Water – 2 cups / 480 ml
  • Instant yeast – 2 teaspoons / 7 g
  • Salt – 1 tablespoon / 15 g
  • Extra virgin olive oil – 2 tablespoons / 30 ml

Instructions

  1. In a large bowl, combine the flour and salt. Stir to mix evenly.
  2. Dissolve the yeast in warm water and add the olive oil.
  3. Gradually mix the liquid ingredients with the dry mixture until a shaggy dough forms.
  4. Knead the dough on a floured surface for 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it, and let it rise in a warm place until doubled in size, about 2 hours.
  6. Preheat the oven to 450°F (230°C) and place a baking stone or heavy baking sheet in the oven to heat.
  7. Punch down the dough, shape it into a round loaf, and place it on a piece of parchment paper.
  8. Allow the dough to rise again until puffy, about 30 minutes.
  9. Score the top of the dough with a sharp knife and slide it onto the hot baking stone using the parchment paper.
  10. Bake for 30-35 minutes until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
  11. Cool completely on a wire rack before slicing.
