Cudduruni is a traditional Italian bread from the town of Lentini in Sicily. This unique bread is known for its rustic, circular shape and is often baked in large ovens during festive seasons. The bread has a rich history tied to local agricultural practices, traditionally using the best semolina flour available at the market. It is cherished for its distinctive flavor, achieved through the use of freshly ground spices and a slow fermentation process that enhances its texture, offering a delightful contrast between a soft interior and a wonderfully crisp crust.

Ingredients

  • all-purpose flour – 3 cups / 360 g
  • water – 1 cup / 240 ml
  • active dry yeast – 1 tablespoon / 9 g
  • salt – 1 teaspoon / 6 g
  • olive oil – 2 tablespoons / 30 ml
  • tomatoes (sliced) – 1 cup / 150 g
  • caciocavallo cheese (shredded) – 1 cup / 100 g
  • onion (sliced) – 1 medium / 150 g
  • oregano – 1 teaspoon / 1 g
  • black olives (pitted and sliced) – 1/2 cup / 70 g

Instructions

  1. 1. In a large bowl, combine flour and salt. Dissolve yeast in lukewarm water and let stand until bubbly, about 5 minutes.
  2. 2. Add yeast mixture and olive oil to the flour. Knead until a smooth and elastic dough forms, about 10 minutes.
  3. 3. Cover the dough with a damp cloth and let it rise in a warm place until doubled in size, about 1 hour.
  4. 4. Preheat oven to 400°F (200°C).
  5. 5. Roll out the dough on a floured surface to a 1/4-inch thickness. Transfer to a baking sheet.
  6. 6. Arrange tomato slices, caciocavallo cheese, onions, and olives over the dough. Sprinkle with oregano and drizzle with olive oil.
  7. 7. Bake for 20-25 minutes or until the crust is golden and the cheese has melted.
  8. 8. Let cool slightly before cutting into pieces and serving.
