Ingredients

  • olive oil – 2 tbsp / 30 ml
  • beef chuck – 1 lb / 450 g, cubed
  • onion – 1 large, chopped
  • garlic – 3 cloves, minced
  • carrots – 2, sliced
  • celery – 2 stalks, diced
  • red wine – 1 cup / 240 ml
  • beef broth – 2 cups / 480 ml
  • tomato paste – 2 tbsp / 30 g
  • thyme – 1 tsp / 1 g, dried
  • rosemary – 1 tsp / 1 g, dried
  • bay leaves – 2
  • potatoes – 3 medium, cubed
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the cubed beef and brown on all sides.
  2. Remove the beef and set aside. In the same pot, sauté the onion, garlic, carrots, and celery until softened.
  3. Return the beef to the pot. Pour in the red wine and scrape up any browned bits from the bottom.
  4. Add the beef broth, tomato paste, thyme, rosemary, and bay leaves. Bring to a boil, then reduce to a simmer.
  5. Cover and simmer for 1 hour, stirring occasionally.
  6. Add the potatoes and continue to cook for another 30 minutes or until the beef is tender and the potatoes are cooked through.
  7. Season with salt and pepper to taste. Remove bay leaves before serving.
