Polastro Imbotio is a luscious and traditional Italian meat dish that embodies the richness and comfort of rustic cooking. Originating from the heartland of Italy, this dish features a whole chicken stuffed with a delightful blend of herbs, sausage, and cheeses. Its origins can be traced back to the small village kitchens of Tuscany, where it was often prepared for celebratory family gatherings. Ingredients

  • whole chicken – 1 (about 3.5 lbs / 1.6 kg)
  • Italian sausage – 8 oz / 225 g
  • stale bread – 2 slices
  • milk – 1/2 cup / 120 ml
  • Parmesan cheese, grated – 1/2 cup / 50 g
  • garlic cloves, minced – 4
  • fresh parsley, chopped – 1/4 cup / 15 g
  • egg – 1
  • olive oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Soak the stale bread in milk until soft, then squeeze out the excess milk.
  3. In a large bowl, combine the soaked bread, Italian sausage, Parmesan cheese, minced garlic, chopped parsley, and egg. Mix well to form the stuffing.
  4. Season the inside of the chicken with salt and pepper. Gently fill the cavity with the stuffing mixture.
  5. Rub the outside of the chicken with olive oil, and season with salt and pepper.
  6. Place the chicken in a roasting pan and roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving. Serve warm.
