Ingredients
- salted cod – 1 lb / 450 g
- extra-virgin olive oil – 1 cup / 240 ml
- garlic clove, minced – 1
- lemon juice – 2 tbsp / 30 ml
- black pepper – to taste
- parsley, chopped – 2 tbsp / 8 g
- whole milk – 1/4 cup / 60 ml
- bay leaf – 1
Instructions
- Rinse the salted cod under cold water. Soak in water for 24 hours, changing the water every 6 hours to desalinate.
- In a saucepan, place the cod with the bay leaf and cover with milk. Add enough water to cover the cod completely.
- Bring to a simmer over medium heat and cook for about 20 minutes, until the cod flakes easily with a fork. Remove the bay leaf and drain the cod.
- Place the cod in a large mixing bowl. With a hand mixer or stand mixer, begin beating the cod while gradually adding olive oil and a little of the cooking milk, creating a creamy, smooth texture.
- Mix in the minced garlic, lemon juice, and chopped parsley. Season with black pepper to taste.
- Transfer to a serving dish and garnish with additional parsley. Serve with crusty bread or polenta.
