Ingredients

  • all-purpose flour – 2 1/2 cups / 300 g
  • water – 3/4 cup / 180 ml
  • olive oil – 1/3 cup / 80 ml
  • salt – 1 tsp / 5 g
  • Stracchino cheese – 12 oz / 340 g

Instructions

  1. In a large bowl, mix the flour and salt. Gradually add water and 2 tablespoons of olive oil. Knead until smooth and elastic, about 10 minutes.
  2. Divide the dough into two equal parts. Cover with a damp cloth and let it rest for about 30 minutes.
  3. Preheat the oven to 480°F (250°C).
  4. Roll out one portion of the dough as thin as possible, approximately 1/16 inch thick.
  5. Place the rolled dough onto a greased baking sheet. Spread the Stracchino cheese evenly over the surface.
  6. Roll out the second portion of dough and cover the cheese. Seal the edges by pinching together.
  7. Drizzle the remaining olive oil over the top crust and sprinkle with additional salt.
  8. Bake for 7-10 minutes or until golden and crisp. Serve hot.
