Ingredients

  • Romanesco artichokes – 8 large

  • Fresh mint leaves – 1/4 cup / 15 g, chopped
  • White wine – 1/2 cup / 120 ml
  • Water – 1 cup / 240 ml
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the stem. Cut off the top third of each artichoke and place them in acidulated water to prevent browning.
  2. In a bowl, combine the minced garlic, parsley, mint, salt, and pepper.
  3. Drain the artichokes and fill the center of each with the herb mixture.
  4. In a deep pan, heat the olive oil and place the artichokes in, cap down. Add white wine and water to the pan, ensuring the artichokes are half submerged.
  5. Cover the pan and braise over low heat for about 30-40 minutes until the artichokes are tender.
  6. Serve warm, drizzled with the pan juices.
