Ingredients
- Ground veal – 1 lb / 450 g
- Bread crumbs – 1 cup / 120 g
- Milk – 1/2 cup / 120 ml
- Eggs – 4
- Ricotta cheese – 1 cup / 250 g
- Parmesan cheese, grated – 1/2 cup / 50 g
- Parsley, chopped – 1/4 cup / 15 g
- Garlic, minced – 2 cloves
- Salt – 1 tsp / 5 g
- Black pepper – 1 tsp / 5 g
- Beef broth – 6 cups / 1.4 L
- Olive oil – 2 tbsp / 30 ml
Instructions
- Preheat oven to 375°F (190°C).
- Soak bread crumbs in milk for 5 minutes.
- In a large bowl, mix ground veal, soaked bread crumbs, 2 eggs, parsley, garlic, salt, and pepper.
- Form mixture into small meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides.
- Transfer meatballs to a large baking dish.
- In a separate bowl, whisk remaining 2 eggs with ricotta and Parmesan cheese.
- Pour beef broth into the baking dish with meatballs, then gently add the cheese mixture.
- Bake in the preheated oven for 25-30 minutes, until the top is golden and set.
- Serve warm, garnished with additional Parmesan and parsley if desired.
