- Vegetable stock – 4 cups / 960 ml
- Tomato paste – 2 tbsp / 30 g
- Sea salt – 1 tsp / 6 g
- Black pepper, freshly ground – 1/2 tsp / 1 g
- Fresh basil leaves, chopped – 1/4 cup / 10 g
- Grated Parmesan cheese – for serving
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the taccole and sauté for 5 minutes until they begin to soften.
- Add the vegetable stock and tomato paste, stirring to combine. Bring to a simmer.
- Season with sea salt and black pepper.
- Let the soup simmer for about 20 minutes, or until the taccole are tender.
