Ingredients

  • Dried chickpeas – 1 cup / 200 g
  • Olive oil – 2 tbsp / 30 ml
  • Yellow onion, chopped – 1 medium / 150 g
  • Garlic cloves, minced – 3 large
  • Carrot, diced – 1 large / 100 g
  • Celery stalk, diced – 1 large / 75 g
  • Bay leaf – 1
  • Rosemary, fresh – 1 sprig
  • Crushed tomatoes – 1 cup / 240 ml
  • Vegetable stock – 4 cups / 960 ml
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Pecorino Romano cheese, grated – 1/4 cup / 25 g

Instructions

  1. Soak the chickpeas overnight in plenty of water. Drain and rinse them the next day.
  2. In a large pot, heat olive oil over medium heat. Add onions, garlic, carrot, and celery, sautéing until the vegetables are soft and fragrant, about 10 minutes.
  3. Stir in the soaked chickpeas, bay leaf, and rosemary, followed by the crushed tomatoes. Cook for another 5 minutes, allowing the flavors to meld.
  4. Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 1 to 1.5 hours, or until the chickpeas are tender.
  5. Season with salt and pepper. Remove the bay leaf and rosemary sprig.
  6. Serve the soup hot, garnished with grated Pecorino Romano cheese.
