Ingredients

  • all-purpose flour – 2 cups / 240 g
  • eggs – 2 large
  • water – 2 tbsp / 30 ml
  • amaretto cookies – 1/2 cup / 80 g, crushed
  • raisins – 1/4 cup / 40 g
  • grated Parmigiano-Reggiano – 1/4 cup / 25 g
  • ground nutmeg – 1/4 tsp
  • cinnamon – 1/4 tsp
  • butter – 1/4 cup / 60 g
  • salt – to taste

Instructions

  1. In a mixing bowl, combine the flour and a pinch of salt. Make a well in the center, add the eggs and water, and mix to form a dough.
  2. Knead the dough on a floured surface until smooth, about 10 minutes. Wrap in plastic wrap and rest for 30 minutes.
  3. For the filling, combine crushed amaretto cookies, raisins, Parmigiano-Reggiano, nutmeg, and cinnamon in a bowl.
  4. Roll out the pasta dough thinly and cut into squares. Place a small spoonful of filling in the center of each square.
  5. Fold the squares into triangles, sealing the edges with a fork. Ensure no air is trapped inside.
  6. Boil a large pot of salted water. Cook the tortelli until al dente, about 4-5 minutes.
  7. Meanwhile, melt butter in a pan. Toss the cooked tortelli in the melted butter.
  8. Serve warm, garnished with additional grated Parmigiano-Reggiano if desired.
