- Parmesan cheese – 1/2 cup grated / 50 g
- salt – to taste
Instructions
- Pour the flour onto a clean surface, creating a mound with a well in the center.
- Crack the eggs into the well, then gently beat them with a fork, gradually incorporating the flour until dough forms.
- Knead the dough for about 10 minutes, until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
- Roll out the dough using a pasta machine to a thin sheet, then cut into narrow ribbons about 1/8 inch wide.
- Cook the pasta in a large pot of salted boiling water for about 2 minutes, until just tender.
- In a large skillet, melt the butter over low heat, adding a small ladle of pasta cooking water to create a silky sauce.
- Drain the pasta, reserving some cooking water, and add it to the skillet. Toss with the butter sauce, adding grated Parmesan cheese and a pinch of salt.
- Serve immediately, garnished with extra Parmesan cheese if desired.
