Ingredients

  • dried pasta (such as spaghetti) – 320 g / 11 oz
  • tender tenerumi leaves and shoots – 250 g / 9 oz
  • ripe tomatoes – 400 g / 14 oz
  • extra virgin olive oil – 4 tbsp
  • garlic cloves, minced – 2
  • red chili flakes – 1/2 tsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Wash and chop the tenerumi leaves and shoots.
  2. Blanch the tomatoes in boiling water for about 30 seconds, then peel and chop them.
  3. In a large pan, heat the olive oil over medium heat. Add garlic and chili flakes, sauté for 1 minute.
  4. Add the chopped tomatoes to the pan, stir and let them simmer for 10 minutes.
  5. In a separate large pot of salted boiling water, cook the pasta according to package instructions.
  6. Add the chopped tenerumi to the tomato sauce. Let it simmer for another 5-7 minutes until tender.
  7. Drain the pasta, reserving a cup of pasta water. Combine pasta with the sauce, adding reserved water if needed to achieve a glossy consistency.
  8. Season with salt and pepper to taste, then serve hot.
