This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Paparele e Bisi, an exquisite springtime pasta dish from the northeastern region of Italy, particularly from Veneto, marries the fresh sweetness of peas (bisi) with the richness of handmade noodles (paparele). Steeped in centuries-old tradition, this dish captures the essence of Italian cucina povera, a celebration of simplicity and flavorful ingredients fresh from local markets. With a focus on seasonal produce, Paparele e Bisi honors the legacy of Italian nonnas who cherished quality, ensuring that each bite is filled with both nostalgia and innovation.
Ingredients
- Fresh peas – 2 cups / 280 g
- All-purpose flour – 2 cups / 240 g
- Eggs – 3 large
- Olive oil – 2 tbsp / 30 ml
- Onion – 1 medium, finely chopped
- Vegetable broth – 2 cups / 480 ml
- Parmesan cheese – 1 cup / 100 g, grated
- Salt – to taste
- Freshly ground black pepper – to taste
- Fresh mint leaves – a handful, roughly chopped
Instructions
- In a large bowl, mix the all-purpose flour with a pinch of salt. Create a well in the center and crack in the eggs. Mix thoroughly with a fork, then knead by hand until you form a smooth dough. Wrap in plastic and let rest for 30 minutes.
- Meanwhile, heat olive oil in a pan over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.
- Add the fresh peas and vegetable broth to the pan, season with salt and pepper, and simmer gently for 10 minutes until the peas are tender.
- Roll out the rested dough thinly and cut into small, short noodles resembling tagliatelle.
- Bring a large pot of salted water to a boil and cook the pasta until al dente, about 3-4 minutes. Drain, reserving a little pasta water.
- Add the cooked paparele to the pan with peas, mixing gently to combine. Stir in Parmesan cheese and add some reserved pasta water if needed to create a creamy sauce.
- Garnish with chopped fresh mint before serving.
