Ingredients

  • fresh mussels – 2 pounds / 900 g
  • unsalted butter – 4 tablespoons / 56 g
  • leek, finely chopped – 1 large
  • celery stalk, finely chopped – 1 stalk
  • dry white wine – 1 cup / 240 ml
  • heavy cream – 1 cup / 240 ml
  • fish stock – 2 cups / 480 ml
  • saffron threads – a pinch
  • salt and black pepper – to taste
  • fresh parsley, chopped – for garnish

Instructions

  1. Clean the mussels thoroughly under cold water, removing any beards.
  2. In a large pot, melt butter over medium heat. Add leek and celery, cooking until soft.
  3. Pour in white wine and bring to a simmer. Add mussels, cover, and cook until they open, about 5 minutes.
  4. Remove mussels from the pot, discarding any that did not open. Set aside and keep warm.
  5. Strain the mussel cooking liquid through a fine sieve to remove any grit.
  6. Return the strained liquid to the pot and add fish stock, saffron, salt, and pepper. Bring to a gentle simmer.
  7. Stir in heavy cream and adjust seasoning as needed.
  8. Serve the soup hot, garnished with fresh parsley.
