Ingredients

  • rabbit, cut into pieces – 1.5 kg / 3 lbs
  • red wine – 750 ml / 3 cups
  • onions, sliced – 200 g / 2 medium
  • carrots, diced – 150 g / 2 medium
  • garlic, minced – 3 cloves
  • bay leaves – 2 leaves
  • thyme – 1 tsp
  • butter – 50 g / 1/4 cup
  • flour – 2 tbsp
  • chicken stock – 500 ml / 2 cups
  • mushrooms, sliced – 250 g / 8 oz
  • salt and pepper – to taste

Instructions

  1. In a large non-reactive container, marinate the rabbit pieces with red wine, onions, carrots, garlic, bay leaves, and thyme overnight in the refrigerator.
  2. Remove rabbit pieces from the marinade and pat dry. Reserve the marinade.
  3. In a large Dutch oven, melt butter over medium-high heat. Brown the rabbit pieces on all sides. Remove and set aside.
  4. Add flour to the butter and stir to create a roux. Cook for about 2 minutes.
  5. Slowly add the reserved marinade and chicken stock to the roux, stirring constantly to avoid lumps.
  6. Return the rabbit to the pot, bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours.
  7. Add mushrooms 30 minutes before the end of cooking time. Season with salt and pepper.
