Korovai – Classic

Korovai is a traditional Ukrainian bread that holds significant cultural heritage as it’s traditionally associated with weddings and celebrations. Often beautifully decorated with symbolic dough ornaments, it represents unity, prosperity, and fertility. The bread is soft, slightly sweet, and rich in flavor, made with a careful balance of milk, butter, and eggs, which gives it a delightful brioche-like texture. The tradition of baking Korovai dates back to ancient times, symbolizing community and the sharing of spirit through food.

Ingredients

  • all-purpose flour – 6 cups / 750 g
  • whole milk – 1.5 cups / 360 ml
  • unsalted butter, softened – 8 tbsp / 120 g
  • granulated sugar – 1/2 cup / 100 g
  • eggs – 5 large
  • instant yeast – 2 tbsp / 18 g
  • salt – 1 tsp
  • vanilla extract – 1 tsp

Instructions

  1. Step 1: Warm the milk to approximately 110°F (43°C).
  2. Step 2: In a large bowl, combine warm milk, yeast, and 1 tbsp of sugar. Let it sit until foamy, about 5-10 minutes.
  3. Step 3: In another bowl, whisk together 4 eggs and the remaining sugar until combined.
  4. Step 4: Add the sugar-egg mixture, softened butter, salt, vanilla extract, and 3 cups of flour to the yeast mixture. Mix until a sticky dough forms.
  5. Step 5: Gradually incorporate the remaining flour and knead for about 10 minutes, until a smooth and elastic dough is formed.
  6. Step 6: Shape the dough into a ball and place it in a greased bowl, cover, and let it rise until doubled in size, about 1.5 hours.
  7. Step 7: Preheat the oven to 350°F (175°C). Deflate the dough and form decorative shapes and braids. Arrange them on top of the main rounded dough ball.
  8. Step 8: Place the Korovai on a baking sheet lined with parchment paper.
  9. Step 9: Whisk the remaining egg and brush it over the top. Optional: Add decorative touches with seeds.
  10. Step 10: Bake for 30-35 minutes, or until golden brown. Cool before serving.
