- garlic – 3 cloves, minced
- vegetable broth – 3 cups / 720 ml
- bay leaf – 1
- paprika – 2 tsp / 5 g
- thyme – 1 tsp / 1 g
- salt – to taste
- black pepper – to taste
- oil – 2 tbsp / 30 ml
Instructions
- In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
- Add minced garlic, sliced carrots, and chopped bell pepper; cook for 5 minutes, stirring occasionally.
- Increase to high heat, add the pork shoulder pieces and sear until browned on all sides.
- Stir in tomato paste, paprika, and thyme, ensuring the spices coat the meat and vegetables well.
- Add the potatoes, pour in the vegetable broth, and add the bay leaf. Season with salt and black pepper.
- Bring to a simmer, cover, and cook on low heat for 60-75 minutes or until pork and vegetables are tender.
- Adjust seasoning with more salt and pepper if needed before serving.
