Ingredients

  • pork shoulder – 1.5 lbs / 680 g
  • large onion – 1, chopped
  • carrots – 2, sliced
  • red bell pepper – 1, chopped
  • potatoes – 4 medium, diced
  • tomato paste – 2 tbsp / 30 g
  • garlic – 3 cloves, minced
  • vegetable broth – 3 cups / 720 ml
  • bay leaf – 1
  • paprika – 2 tsp / 5 g
  • thyme – 1 tsp / 1 g
  • salt – to taste
  • black pepper – to taste
  • oil – 2 tbsp / 30 ml

Instructions

  1. In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add minced garlic, sliced carrots, and chopped bell pepper; cook for 5 minutes, stirring occasionally.
  3. Increase to high heat, add the pork shoulder pieces and sear until browned on all sides.
  4. Stir in tomato paste, paprika, and thyme, ensuring the spices coat the meat and vegetables well.
  5. Add the potatoes, pour in the vegetable broth, and add the bay leaf. Season with salt and black pepper.
  6. Bring to a simmer, cover, and cook on low heat for 60-75 minutes or until pork and vegetables are tender.
  7. Adjust seasoning with more salt and pepper if needed before serving.
