Ingredients
- leeks – 3 large / 750 g
- carrots – 2 medium / 150 g
- potatoes – 2 medium / 300 g
- celery root – 1/2 small / 100 g
- onion – 1 large / 200 g
- vegetable stock – 6 cups / 1.5 L
- olive oil – 2 tbsp / 30 ml
- tomato paste – 2 tbsp / 30 g
- white wine vinegar – 2 tbsp / 30 ml
- salt – to taste
- black pepper – to taste
- parsley – a handful, chopped / 15 g
Instructions
- Rinse the leeks thoroughly under running water to remove any dirt. Slice them thinly just up to the green parts.
- Peel and dice the carrots, potatoes, celery root, and onion.
- In a large pot, heat olive oil over medium heat. Add the onion and sauté for about 3 minutes until translucent.
- Add the carrots, celery root, and leeks to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the potato cubes and tomato paste, combining everything well.
- Pour in the vegetable stock and bring to a boil. Reduce heat and let it simmer for about 25-30 minutes, or until vegetables are tender.
- Add vinegar, salt, and pepper to taste. Stir well.
- Remove the pot from heat and sprinkle with fresh parsley before serving.
