Ingredients

  • leeks – 3 large / 750 g
  • carrots – 2 medium / 150 g
  • potatoes – 2 medium / 300 g
  • celery root – 1/2 small / 100 g
  • onion – 1 large / 200 g
  • vegetable stock – 6 cups / 1.5 L
  • olive oil – 2 tbsp / 30 ml
  • tomato paste – 2 tbsp / 30 g
  • white wine vinegar – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste
  • parsley – a handful, chopped / 15 g

Instructions

  1. Rinse the leeks thoroughly under running water to remove any dirt. Slice them thinly just up to the green parts.
  2. Peel and dice the carrots, potatoes, celery root, and onion.
  3. In a large pot, heat olive oil over medium heat. Add the onion and sauté for about 3 minutes until translucent.
  4. Add the carrots, celery root, and leeks to the pot. Cook for another 5 minutes, stirring occasionally.
  5. Stir in the potato cubes and tomato paste, combining everything well.
  6. Pour in the vegetable stock and bring to a boil. Reduce heat and let it simmer for about 25-30 minutes, or until vegetables are tender.
  7. Add vinegar, salt, and pepper to taste. Stir well.
  8. Remove the pot from heat and sprinkle with fresh parsley before serving.
