  • Celery stalks – 2, sliced

  • Bay leaves – 2
  • Thyme – 1 tsp / 1 g
  • Salt – to taste
  • Black pepper – to taste
  • Tomato paste – 2 tbsp / 30 g
  • Water – 8 cups / 1.9 liters
  • Parsley – a handful, chopped

Instructions

  1. Rinse and soak the dried beans in water overnight, then drain.
  2. In a large pot, add the smoked pork ribs and cover with 8 cups of water. Bring to a boil and simmer for 30 minutes.
  3. Add the soaked beans to the pot along with carrots, onion, celery, garlic, bay leaves, and thyme. Season with salt and pepper.
  4. Simmer the mixture for about 1 to 1.5 hours until the beans are tender.
  5. Stir in the tomato paste and let the soup cook for another 15 minutes.
  6. Adjust the seasoning, then remove from heat and discard the bay leaves.
  7. Garnish with chopped parsley before serving.
