Guvech is a traditional Bulgarian stew renowned for its rich and hearty flavors. Originating from the Balkans, this dish is a staple of Bulgarian cuisine, reflecting a harmonious blend of vegetables, meats, and fragrant herbs. Ingredients
- olive oil – 2 tablespoons / 30 ml
- beef stew meat – 1 pound / 450 g
- onion, chopped – 1 large / 150 g
- red bell pepper, chopped – 1 medium / 120 g
- green bell pepper, chopped – 1 medium / 120 g
- garlic cloves, minced – 4 cloves / 20 g
- carrots, sliced – 2 medium / 150 g
- potatoes, diced – 3 medium / 400 g
- zucchini, sliced – 1 medium / 200 g
- eggplant, cubed – 1 small / 200 g
- canned tomatoes, diced – 1 can / 400 g
- beef broth – 2 cups / 480 ml
- paprika – 1 tablespoon / 7 g
- bay leaves – 2 leaves
- salt – 1 teaspoon / 5 g
- black pepper – 1/2 teaspoon / 2.5 g
- fresh parsley, chopped – 2 tablespoons / 8 g
Instructions
- Heat the olive oil in a large pot over medium heat. Add the beef stew meat and brown it on all sides.
- Add the chopped onion, red and green bell peppers, and garlic to the pot. Sauté until softened, about 5 minutes.
- Stir in the sliced carrots, diced potatoes, sliced zucchini, and cubed eggplant.
- Add the canned tomatoes and beef broth. Stir in the paprika, bay leaves, salt, and black pepper.
- Bring the mixture to a simmer. Cover the pot and reduce the heat to low. Let it cook for 1.5 to 2 hours, or until the beef is tender.
- Before serving, remove the bay leaves and garnish with fresh parsley.
