Ingredients
- Congo eel, cleaned and cut into pieces – 500 g / 1.1 lbs
- Soy sauce – 1/2 cup / 120 ml
- Rice wine – 1/4 cup / 60 ml
- Ginger, thinly sliced – 30 g / 1 oz
- Garlic, minced – 3 cloves
- Brown sugar – 2 tbsp / 30 g
- Scallions, cut into 2-inch pieces – 2
- Sesame oil – 1 tbsp / 15 ml
- Vegetable oil – 2 tbsp / 30 ml
- Water – 1/2 cup / 120 ml
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the ginger and garlic, sautéing until fragrant, about 2 minutes.
- Increase the heat to high; add the eel pieces and brown them lightly on all sides.
- Reduce the heat to medium and pour in the soy sauce, rice wine, and water.
- Add the brown sugar, stirring until dissolved.
- Cover and let the eel simmer for 30-35 minutes until tender.
- Add the scallions and sesame oil, stirring to combine well.
- Serve hot, optionally garnished with fresh herbs.
