Turkey Rice is a beloved dish in Taiwanese cuisine, hailing specifically from Chiayi City. This simple yet flavor-packed meal features tender shredded turkey laid over a bed of aromatic rice, drizzled with a savory sauce. Traditionally served during festive occasions and family gatherings, this dish has become a staple in local street food scenes across Taiwan.

Ingredients

  • turkey breast – 500 g / 1.1 lbs
  • jasmine rice – 2 cups / 400 g
  • soy sauce – 3 tbsp / 45 ml
  • sesame oil – 1 tbsp / 15 ml
  • garlic cloves – 3, minced
  • sugar – 1 tbsp / 12 g
  • chicken broth – 2 cups / 480 ml
  • green onions – 2, sliced
  • ginger – 1 inch piece, sliced
  • white pepper – 1 tsp / 5 g

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice using a rice cooker or on the stove with 2 cups of chicken broth.
  2. In a pot, place the turkey breast, ginger slices, and a pinch of salt. Cover with water and bring to boil. Reduce heat, cover, and simmer for 20 minutes until cooked through.
  3. Remove the turkey breast and allow it to cool. Shred the turkey into thin pieces.
  4. In a pan, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant. Add the soy sauce and sugar, stirring until the sugar dissolves. Let simmer for 2 minutes.
  5. Mix the shredded turkey with the sauce in the pan, heating it gently until the turkey is well coated.
  6. To serve, place a portion of rice in a bowl, top with the shredded turkey, and drizzle lightly with any remaining sauce. Garnish with sliced green onions and a dash of white pepper.
