Ingredients

  • Fresh pollack fillets – 4 fillets / 600 g
  • Flour – 1 cup / 120 g
  • Eggs – 2 large
  • Green onion – 2 stalks, finely chopped
  • Salt – 1 tsp / 6 g
  • Black pepper – 1/2 tsp / 1 g
  • Vegetable oil for frying – 1 cup / 240 ml
  • Lemon wedges – for serving

Instructions

  1. Pat the pollack fillets dry with a paper towel and lightly season with salt and pepper.
  2. Place flour in a shallow dish and beat the eggs in another shallow dish.
  3. Coat each fillet in flour, shaking off excess, then dip into beaten eggs.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Fry each fillet for 3-4 minutes on each side until golden and crispy.
  6. Remove and drain on paper towels. Garnish with green onions and serve with lemon wedges.
