Tsuivan is a classic Mongolian dish deeply rooted in the country’s nomadic culinary traditions. This dish combines thick hand-cut noodles with succulent lamb and an array of vegetables, simmered together in a harmonious medley. The origins of Tsuivan are tied to the Mongolian nomads, who relied on hearty and filling meals to sustain them through harsh climates. The use of lamb and root vegetables reflects the resources available on the vast steppes of Mongolia. Ingredients

  • lamb shoulder – 500 g / 1.1 lbs
  • all-purpose flour – 2 cups / 240 g
  • water (for dough) – 3/4 cup / 180 ml
  • carrot – 1 large / 150 g
  • white onion – 1 medium / 100 g
  • cabbage – 1/4 head / 200 g
  • potato – 1 large / 200 g
  • vegetable oil – 3 tbsp / 45 ml
  • soy sauce – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2 g

Instructions

  1. Mix flour and water to create a dough. Knead for about 10 minutes until smooth. Let it rest for 30 minutes.
  2. Roll out the dough thinly and cut into strips for noodles.
  3. In a large pan, heat oil and cook lamb until browned.
  4. Add chopped onion, carrot, cabbage, and potato. Cook for another 5 minutes.
  5. Add noodles to the pan. Pour soy sauce evenly over the mixture.
  6. Cover and simmer on low heat for 20 minutes or until the vegetables and noodles are cooked through.
  7. Season with salt and pepper before serving.

Substitutions

  • lamb shoulder -> beef or chicken
  • all-purpose flour -> whole wheat flour
  • soy sauce -> tamari
