Andong Jjimdak is a succulent braised chicken dish hailing from the city of Andong in South Korea. Celebrated for its harmonious blend of sweet, spicy, and savory flavors, this dish showcases juicy chicken pieces braised with vegetables in a rich soy sauce-based marinade. The dish has its roots in the Joseon Dynasty, traditionally aimed at royalty for its nourishing and intricate flavor profile, combining simplicity and depth in every bite.
Ingredients
- Whole chicken, cut into pieces – 3 lbs / 1.4 kg
- Potatoes, peeled and chunked – 2 cups / 330 g
- Carrots, sliced – 1 cup / 150 g
- Onion, sliced – 1 large / 200 g
- Button mushrooms, halved – 1 cup / 100 g
- Soy sauce – 1 cup / 240 ml
- Brown sugar – 1/4 cup / 55 g
- Mirin – 2 tbsp / 30 ml
- Garlic, minced – 6 cloves / 18 g
- Gochujang (Korean chili paste) – 2 tbsp / 30 g
- Dried Korean noodles (dangmyeon) – 200 g / 7 oz
- Sesame oil – 1 tbsp / 15 ml
- Green onions, chopped – 1/2 cup / 50 g
- Black pepper – 1/2 tsp / 1 g
- Water – 2 cups / 480 ml
Instructions
- In a large pot, add chicken pieces and pour in the soy sauce, brown sugar, mirin, garlic, gochujang, and water. Stir well.
- Bring the mixture to a boil over medium-high heat, then reduce to low and simmer for 20 minutes.
- Add potatoes, carrots, onion, and mushrooms, stir to combine, and cook for another 20 minutes until vegetables are tender.
- Soak the dried Korean noodles in water until soft, then add to the pot, cooking for another 5 minutes.
- Drizzle with sesame oil, add green onions, and black pepper. Stir well and cook for an additional 2 minutes.
- Serve hot with steamed rice or as desired.

- Mirin -> White wine vinegar with a pinch of sugar
- Dangmyeon -> Vermicelli noodles
- Gochujang -> Sriracha or hot chili sauce
