Ingredients
- Aged kimchi – 2 cups / 480 g
- Pork belly – 200 g / 7 oz
- Tofu – 200 g / 7 oz, firm
- Onion – 1 medium, sliced
- Garlic – 3 cloves, minced
- Gochugaru (Korean red pepper flakes) – 2 tbsp
- Soy sauce – 2 tbsp
- Sesame oil – 1 tbsp
- Water – 3 cups / 720 ml
- Salt – to taste
- Scallions – 2, chopped
Instructions
- Heat sesame oil in a large pot over medium heat. Add minced garlic and pork belly slices. Sauté until the pork is lightly browned.
- Add sliced onion and continue to stir-fry for another 2 minutes until onions are soft.
- Incorporate the aged kimchi and gochugaru into the pot. Stir well to combine with the pork and onions.
- Pour in water and soy sauce. Bring the mixture to a boil.
- Reduce the heat to a simmer and cook for 20 minutes, allowing the flavors to meld.
- Add the tofu by slicing it into cubes, then gently placing it into the stew. Simmer for another 10 minutes.
- Season with salt to taste. Garnish with chopped scallions before serving.
