Japchae is a classic Korean dish renowned for its vibrant flavors and colorful presentation. Traditionally served on special occasions, this dish combines chewy sweet potato glass noodles with an array of sautéed vegetables and a savory-sweet sauce. Known for its perfect balance of textures and tastes, Japchae reflects Korean culinary tradition’s emphasis on harmony.

Ingredients

  • Sweet potato noodles – 8 oz / 225 g
  • Soy sauce – 1/4 cup / 60 ml
  • Sesame oil – 2 tbsp / 30 ml
  • Brown sugar – 2 tbsp / 28 g
  • Garlic cloves, minced – 3 cloves
  • Spinach – 2 cups packed / 60 g
  • Carrot, julienned – 1 large
  • Bell pepper, thinly sliced – 1 large
  • Onion, thinly sliced – 1 medium
  • Shiitake mushrooms, sliced – 1 cup / 100 g
  • Egg – 1, beaten
  • Green onions, chopped – 2
  • Sesame seeds – 1 tbsp / 9 g

Instructions

  1. Cook the sweet potato noodles according to package instructions, drain, and rinse with cold water.
  2. In a small bowl, mix soy sauce, sesame oil, brown sugar, and minced garlic to make the sauce.
  3. Heat a pan over medium heat, scramble the egg, and set aside.
  4. In the same pan, add a little oil and sauté the onions, carrot, bell pepper, and mushrooms until tender.
  5. Add spinach and cook until wilted.
  6. Combine the noodles and vegetables, then pour the sauce over the top, mixing thoroughly until well combined and heated through.
  7. Top with scrambled egg slices, chopped green onions, and sesame seeds before serving.

  • Soy sauce -> Tamari
  • Brown sugar -> Honey
  • Shiitake mushrooms -> Button mushrooms
