Ingredients
- beef tenderloin – 500 g / 1.1 lbs
- Korean pear – 1 medium-sized, julienned
- soy sauce – 2 tbsp / 30 ml
- sesame oil – 1 tbsp / 15 ml
- sugar – 1 tsp / 5 g
- garlic – 2 cloves, minced
- sesame seeds – 1 tbsp / 9 g
- ground black pepper – 1/2 tsp / 1 g
- egg yolks – 4, from large eggs
Instructions
- Freeze the beef tenderloin for about 2 hours until firm but not frozen solid.
- Thinly slice the beef across the grain, then cut into matchstick-sized pieces.
- In a large bowl, combine soy sauce, sesame oil, sugar, minced garlic, sesame seeds, and black pepper.
- Add the sliced beef to the bowl and mix well to coat with the marinade.
- Refrigerate the marinated beef for at least 30 minutes to an hour to absorb flavors.
- Meanwhile, peel the Korean pear and julienne, then set aside.
- To serve, layer a mound of seasoned beef in the center of each plate, carefully shaping it.
- Arrange julienned pear around the beef.
- Top each serving with a raw egg yolk and a sprinkling of additional sesame seeds.
