Ingredients
- basmati rice – 2 cups / 400 g
- coconut milk – 2 cups / 480 ml
- water – 1 1/2 cups / 360 ml
- salt – 1 teaspoon / 5 g
- vegetable oil – 1 tablespoon / 15 ml
Instructions
- Rinse the basmati rice under cold running water until the water runs clear to remove excess starch.
- In a heavy-bottomed pot, combine coconut milk, water, salt, and vegetable oil. Warm over medium heat until just starting to simmer.
- Add the rinsed rice to the pot, stir gently, and cover with a tight-fitting lid.
- Reduce the heat to low and cook for about 18-20 minutes, or until the rice has absorbed the liquid and is tender.
- Remove from heat and let it rest, covered, for 5-10 minutes before fluffing with a fork.
- Serve warm, complemented by your favorite curry or grilled protein.
