Salade de Palmiste, often referred to as the ‘millionaire’s salad’, is a luxurious and vibrant dish originating from the Seychelles, an island nation in the Indian Ocean. This delicate salad features the heart of palm, known locally as ‘palmiste’. The meal is a celebration of tropical flavors, combined with fresh greens and a harmonious dressing to showcase the island’s rich biodiversity. Traditionally, the heart of palm was harvested directly from wild palm trees, but today it’s cultivated sustainably to preserve the islands’ natural fauna.
Ingredients
- Hearts of palm – 2 cups / 300 g
- Ripe tomatoes – 2 medium, diced
- Cucumber – 1 large, sliced
- Red onion – 1 small, finely sliced
- Fresh parsley – 1/4 cup / 15 g, chopped
- Lemon juice – 2 tbsp / 30 ml
- Olive oil – 3 tbsp / 45 ml
- Salt – 1/2 tsp / 2.5 g
- Black pepper – 1/4 tsp / 1 g
Instructions
- Slice the hearts of palm into thin rounds and place in a large salad bowl.
- Add the diced tomatoes, sliced cucumber, and finely sliced red onion to the bowl.
- Sprinkle chopped parsley over the vegetables.
- In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss gently to combine all ingredients.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
